Almond flour vs almond meal

Almond flour is usually made from blanched almonds, with the skins removed, and ground very fine. Almond meal is often ground with the skins on and is coarser, which is why a cup of it holds less weight. In cookies, macarons and cakes, the finer flour gives a smoother, lighter result; almond meal works well in rustic bakes, crumb toppings and coatings. If a recipe asks for one and you have the other, swap them by weight rather than by the cup.

Can almond flour replace wheat flour?

Not one for one. Almond flour has no gluten, so it can't build the structure that holds a bread or a light sponge together. It also weighs less per cup and carries much more fat. Recipes written for almond flour account for this with extra eggs or binders. For the best results, use recipes developed for almond flour instead of converting a wheat recipe.

Measuring almond flour

Almond flour tends to clump, especially when it's cold. Break up the lumps with a whisk or fork before you measure, then spoon it into the cup and level it. Because of its natural oils, almond flour keeps best in the fridge or freezer. Let it come to room temperature before measuring so the clumps don't throw off the cup.
