Whole, low-fat or skim?

The difference is too small to matter in the kitchen. Fat is lighter than water, so whole milk is a hair lighter than skim, but the gap is a gram or two per cup. Use the same numbers for whole, 2%, 1% and skim milk. Buttermilk weighs about the same as regular milk, about 244 g per cup.

Plant milks

Almond, oat and soy milk are mostly water, so they weigh close to water and milk, roughly 240 grams per cup. Oat and soy milk can run a little heavier because of their added thickeners and protein. If a recipe was written for dairy milk, you can swap a plant milk in by the same cup or the same weight. Expect a change in flavor and browning rather than in measurement.

Why some charts say 227 g

King Arthur Baking and some other sources list a cup of milk as 8 ounces, or 227 grams. That's a rounded convention, treating a cup as 8 ounces of weight, and it's close enough for most recipes. We calculate from the real size of a US cup and the density of milk, which gives 244 grams. If a recipe you trust gives its own weight for milk, follow the recipe.

Evaporated and condensed milk

These aren't interchangeable with regular milk. Evaporated milk has had about 60% of its water cooked off and weighs a little more per cup than fresh milk. Sweetened condensed milk is thick and syrupy, about 312 grams per cup, and a standard 14-ounce can (397 g) holds about 1.27 cups.

Measuring milk without a scale

Use a clear liquid measuring cup with a spout, set it on the counter and read it at eye level. Looking down from above makes the milk appear higher than it is, so you'll pour too little. For a tablespoon or two, regular measuring spoons are fine: one tablespoon of milk is about 15 grams.
