Why Greek yogurt doesn't weigh more per cup
Greek yogurt is regular yogurt with much of the liquid whey strained out. That makes it thicker and higher in protein, but it doesn't make it much denser. What changes is how it behaves in the cup. Thick yogurt holds air pockets when you spoon it in loosely, and it compacts when you press it down. Spoon it in and level the top, without packing, and you'll land close to the numbers above.
Because it's so thick, Greek yogurt is also the easiest dairy ingredient to weigh. Put the bowl on the scale and spoon it straight in.
How many cups are in a container?
- A single-serve 5.3-ounce cup (150 g) is about 0.66 cups, so a little under ⅔ cup.
- A 6-ounce cup (170 g) is ¾ cup.
- A 32-ounce tub (907 g) holds about 4 cups.
Swapping yogurt, Greek yogurt and sour cream
Sour cream weighs the same as yogurt by the cup, about 227 grams, and the two swap well in most baking. Greek yogurt is thicker than regular yogurt, so if you use it in place of regular yogurt in a batter, thin it with a spoonful or two of milk. Going the other way, regular yogurt makes a looser batter than Greek; strain it in a sieve lined with a coffee filter for an hour or two to thicken it.
Yogurt is acidic, just like buttermilk, which is why so many yogurt cakes and quick breads use baking soda. If you replace yogurt with milk, the batter loses that acid and may not rise as well.
