About ScoopMath

ScoopMath is a small, independent website with one job: turning the cups and spoons in a recipe into grams you can weigh, and back again, with numbers you can trust.

Why this site exists

Most American recipes measure by volume, while most of the world, and most professional bakers, measure by weight. Converting between the two sounds simple until you notice that a cup of flour and a cup of sugar don't weigh the same. Flour is light and airy, so a cup holds about 120 grams. Sugar crystals pack tightly, so the same cup holds about 198 grams.

Many converters online use a single number for every ingredient, or treat a cup as 8 ounces of weight. That is how cakes come out dry and cookies spread flat. ScoopMath was built to do the conversion properly, one ingredient at a time.

Where our numbers come from

For flours, sugars, butter and other dry or solid ingredients, our weights follow the published ingredient weight chart from King Arthur Baking, a reference widely used by American bakers. For liquids such as water, milk and cream, we calculate the weight from the true size of a US cup (236.6 mL) and the typical density of each liquid.

Where a widely known fact gives a firmer anchor, we check our numbers against it. A standard packet of instant yeast, for example, holds 7 grams, which is 2¼ teaspoons, so our yeast figures agree with that. When sources disagree, we choose the value that matches how home bakers actually measure.

All conversions use US cups and US spoons. If your recipe comes from Australia, Canada or another country that uses a 250 mL metric cup, read how US and metric cups differ.

How we build the tools

Found a mistake?

Ingredient weights vary with brand, humidity and how you fill the cup, and we are always open to a better number. If a conversion looks wrong to you, or there's an ingredient you'd like us to add, please send us a message. Corrections are checked against published references and updated across the whole site.

Advertising and links

ScoopMath is free to use. In the future, the site may show ads or link to kitchen tools we think are useful, which helps keep it running. Our numbers are never influenced by advertisers.
